Abstract

Five flavonoid glycosides were isolated from the butanol-soluble fraction of thyme extracts. Their structures were determined by spectral analyses (NMR, MS). Their antioxidant activity was evaluated in two models (DPPH radical scavenging and Trolox equivalent antioxidant activity). The most active compounds were found to be eriodictyol-7-rutinoside and luteolin-7-O-β-glucopyranoside.
